Since 2018, the Maltese brand, led by Executive Chef, Andre Camilleri, has opened up 3 outlets across Malta, one in Ta’ Xbiex, one in Birkirkara and one in Luqa.

The Mexican style eatery, Avotaco, first contacted Luke in late 2022. They expressed their desire to become ISO certified for ISO 9001. However, this implementation was so successful, that they asked Luke to help them implement ISO 22000 as well.

ISO 9001 involves with the creation of a Quality Management System (QMS), while ISO 22000 revolves around food safety. For this, there is also a specialised management system.

How did Luke Desira Help Avotaco?

One of the first things that Luke did to help Avotaco improve was to make effective use of corrective and preventive actions. Through meticulous analysis, discrepancies in items received via third-party couriers were identified. Through the implementation of effective corrective and preventive actions, these issues were mitigated across all Avotaco outlets, ensuring seamless operations.

Strategic controls are fundamental in business, and Luke helped Avotaco integrate precise mechanisms to ensure tasks were executed efficiently. This was done through the use of tailored checklists managed by the right individuals at the right time.
